In this module, we will go through the decision-making process necessary to decide how to preserve your perfectly-set jelly!

You want to use a tall pot because of the liklihood the jelly will boil over. You have to get it to a boil that cannot be stirred down, and peach and apple juice, especially, are foamy and tend to boil over. Your best defense is a tall pot or stock pot.
